Viñedos propios.

Josep Mata Capellades empezó a elaborar cava en 1924 y fundó la bodega que hasta hoy llevaría el nombre de su padre, Recaredo Mata Figueres. En la actualidad, son los hijos del fundador, Josep y Antoni Mata Casanovas, quienes dirigen esta bodega pionera en la elaboración de cavas totalmente secos,brut nature y de larga crianza. Es una familia de viticultores biodinámicos especializados en Brut Nature de añada marcados por la huella de las largas crianza. Su compromiso por embotellar los paisajes de l’Alt Penedès los lleva a cultivar viñas exclusivamente de titularidad propia plantadas 100% con variedades tradicionales de la zona, especialmente la xarel•lo. Cava Recaredo cultiva las 46 ha. de viñedos propios con el mínimo de intervención, buscando siempre el equilibrio de la cepa y procurando respetar el medio para conseguir la expresión de cada vendimia; una viticultura exclusivamente de secano, sin herbicidas ni insecticidas, con abonos de origen orgánico y natural, vendimias realizadas de forma totalmente manual y cavas siempre brut nature y de añada. En Recaredo practican agricultura de secano siguiendo siempre los principios de la biodinámica, un paso más allá de la ecología, pioneros en la región del Penedès en obtener la certificación biodinámica.

Los vinos espumosos de Recaredo son la expresión más sublime del tiempo, con crianzas que van desde los 30 meses hasta los más de 20 años. Las crianzas en Recaredo se realizan siempre con tapón de corcho natural, un material técnicamente idóneo para preservar el sentido originario de un espumoso de largo envejecimiento. En Recaredo, auténticos artesanos en el oficio del degüelle, expulsan las lías de la crianza manualmente a temperatura fresca y natural de las cavas. Recaredo mantiene un compromiso único, auditado y certificado por Bureau Veritas:
