La elaboración de cavas.
Parxet es una bodega de referencia en la elaboración de cavas y la más importante de la pequeña D.O. Alella (Barcelona). Una firma familiar con una tradición elaboradora centenaria, caracterizada por su afán innovador. De hecho, fue una de las primeras firmas en comercializar un Brut Nature (1965). La historia de Parxet se inicia en el siglo XVIII, cuando la familia Suñol adquiere la finca Mas Parxet en Tiana comenzando en ella la elaboración vinícola, pero no será hasta 1918 cuando esta bodega comience a elaborar cavas. A mediados de los ochenta Parxet se fusiona con otra de las bodegas más importantes de Alella, situada en el municipio de Santa María de Martorelles y dedicada a la producción de vino blanco. Así, Parxet S.A tiene una doble cara: en Santa María de Martorelles, una bodega con modernas instalaciones rodeadas de su propio viñedo, donde se elaboran los vinos base de los cavas y el blanco Marqués de Alella; y en Tiana, el edificio modernista Mas Parxet, donde se realiza el envejecimento en botella de los cavas en las naves subterráneas construidas en 1918. En Parxet trabajan siguiendo el método tradicional de elaboración de espumosos, empezando por el trabajo de selección de viñedos, y siguiendo el más estricto respeto por el producto natural. Parxet elabora cava desde 1920 en la zona de Alella, al norte de Barcelona, donde encontramos la característica variedad Pansa Blanca y los suelos arenosos de sauló. Trabajamos siguiendo el método tradicional de elaboración de espumosos, empezando por el trabajo de selección de viñedos, y siguiendo el más estricto respeto por el producto natural.
La elaboración en Parxet.
El proceso de elaboración del cava consta de 2 fases. La 1ª es la elaboración del vino base. Y la 2ª es la transformación del vino base a espumoso con los procesos del tiraje, la crianza, el degüelle y la expedición. O sea, la aplicación del método tradicional. El vino base para cavas de Parxet se obtiene de las variedades de uva blanca macabeo, parellada, pansa blanca, chardonnay y de la tinta pinot noir. La elaboración del vino base para cava es igual que la vinificación en blanco, con los mismos procesos, pero con características propias. El suelo de las viñas de Parxet está constituido por sauló, una roca de origen granítico típica de la D.O. Alella que entre otras cualidades es muy ácido, que nos aporta a la uva este pH bajo. Parxet selecciona la uva en la recepción en bodega con mesa de selección. En Parxet realizamos el prensado con uva entera en prensa neumática, aún en detrimento del rendimiento, para generar el menor porcentaje de borras (burbos, fangos) en el decantado posterior. Así, podemos realizar un decantado estático a baja temperatura, para evitar oxidaciones e inicios incontrolados de fermentación. De igual manera, la fermentación con temperaturas muy bajas y controladas nos permite un proceso de autoclarificación pues ésta se alarga mucho. De esta forma evitamos realizar la clarificación postfermentativa obteniendo un vino base más complejo y con mayor espumabilidad.
La crianza.
La crianza es un periodo más o menos largo dónde el cava sufre cambios físico-químicos y organolépticos. Durante la crianza se da la fermentación, generando mayoritariamente alcohol (sube un 1,4 % aproximadamente) y CO2 que conlleva la aparición de la sobrepresión dentro la botella. La fermentación dura aproximadamente 20-30 días. Las levaduras se multiplican. En esta fase es importante la posición de la botella. Sólo la posición horizontal de la botella permite asegurar la total fermentación de los azúcares por los movimientos de convección que hay dentro del cava. Al final de la crianza se debe clarificar las botellas en Parxet. La clarificación o removido del cava es una combinación de rotación e inclinación de la botella. Se parte de una botella horizontal turbia y se obtiene una botella en punta y limpia con las madres (lías) en su cuello. Una vez está limpia la botella se procede al degüelle. El degüelle consiste en sacar de la botella las madres acumuladas al cuello. Generalmente se congela el cuello (degüelle en frío) y al sacar el tapón corona sale las madres debido la presión. Después se rellena la botella con cava y licor de expedición. Finalmente se tapona con tapón de corcho y se pone el morrión (o bozal, alambre), se lava la botella por fuera y para terminar se etiqueta y se encapsula.
