Español [ ES ]Bodegas Valdespino, una de las bodegas más antiguas de Jerez y perteneciente al Grupo Estévez, es elaboradora de vinos míticos en esta D.O., como es el caso de su famoso Sacristía, desde 1910. Su fino Inocente es un vino atípico por la elaboración artesanal y fiel a la tradición de que todavía goza. Procedente de un único pago, Machamudo, es el único que todavía fermenta en botas de roble de 500 litros, lo normal, en nuestros días, es que fermenten en depósitos de acero inoxidable de unos 50.000 litros, y tiene 10 criaderas, cuando lo normal es de dos a tres. El edificio de Valdespino fue construido en el año 2000 y alberga 20.000 botas jerezanas de roble americano, donde se crían todos los vinos de la bodega: Finos, Amontillados, Olorosos, Cream y Pedro Ximénez. Parte del Grupo Bodeguero José Estévez, la bodega Valdespino elabora Inocente, uno de los vinos jerezanos más reconocidos en el mundo.
La bodega Valdespino es una de las más tradicionales y antiguas de Jerez de la Frontera. La relación de la familia Valdespino, dueña de la bodega, con el vino jerezano se remonta al s. XIII, aunque la bodega no se comenzó a construir sino hasta 1875. En el año 1910, a poco de comenzado el siglo pasado, la familia Valdespino registró, con mucho tino, “Sacristía” como marca comercial. De esta forma consiguieron tener la protección legal que brinda el registro de marcas y patentes. En el año 1999 el Grupo Bodeguero José Estévez adquirió la bodega Valdespino sin los cascos que la misma poseía en el centro de Jerez, lo que llevó a la construcción de una nave en el edificio que tiene el grupo. Allí se trasladaron 25.000 botas que fueron desmontadas y vueltas a montar.
El Pago Macharnudo. El cultivo de vid en este pago se remonta al s. XIII, por lo que es uno de los pagos más tradicionales de España. Ya desde el s. XIX, Macharnudo era un referente mundial en lo que a vinos jerezanos respecta. El pago es uno de los más elevados del Marco; se encuentra ubicado a 135 metros sobre el nivel del mar y goza de una orientación que mira al mar, por lo que sus viñedos reciben todos los beneficios de los vientos del Poniente. El suelo es completamente albarizo, lo que lo hace perfecto para el cultivo de la vid. Todas estas características hacen que los vinos que nacen de este pago se destaquen por su gran personalidad, mineralidad y potencia.
De entre los vinos que elabora Valdespino, se destaca el vino fino Inocente, elaborado con uvas de una sola viña del Pago de Macharnudo. Este es el único vino que aún cursa su etapa de fermentación en botas de roble de aproximadamente 500 litros. Además, tiene 10 criaderas. El Amontillado Tío Diego es otro clásico jerezano que se elabora de manera tradicional a partir de las uvas del Pago y con el método de criaderas y solera. Con un exquisito bouquet de avellanas, un oscuro color ámbar y un paladar seco y equilibrado es ideal para acompañar carnes de caza. Otros vinos de la bodega:
