Pioneros del cava.
En la comarca del Penedès, la familia Llopart lleva desde 1385 dedicada al cultivo de la viña, una ocupación que se convirtió en exclusiva en el siglo XVIII. En 1887 lanzaron al mercado su primer vino y se convirtieron en una de las firmas pioneras en la elaboración de cavas de calidad. Los Llopart cuentan con la Heredad Can Llopart de Subirats, donde se ubica la masía y 60 hectáreas de viñedos propios cultivados a lo largo de una colina. Su particular orografía y orientación hace que los frutos se beneficien de una de las mayores variaciones térmicas del Penedès, favoreciendo el proceso de maduración. Además, los Llopart han dividido la heredad en tres terruños en función de los diferentes subsuelos y variaciones microclimáticas, lo que les permite adaptar cada variedad y clon de cepa al terruño más apropiado.
Sus variedades.
La cava Llopart está ubicada en la Heredad "Can Llopart de Subirats", en el municipio de Subirats, entre el Ordal y el macizo del Garraf y a cuatro kilómetros de Sant Sadurní d'Anoia. La nueva bodega de elaboración y crianza, rodeada de viñedos de la propiedad, coexiste con una masía típica catalana del siglo XIV, de las más antiguas del Penedès, con valiosos elementos arquitectónicos y abundante documentación preservada. Según acredita un documento redactado en latín y datado en 1385, un antecesor de la familia Llopart, Bernardus Leopardi, recibió la concesión de unas viñas situadas en la actual Heredad. A lo largo de los siglos la familia Llopart compaginó el cultivo de productos de agricultura tradicional mediterránea: el viñedo, el trigo y el olivo. A finales del siglo XVIII se dedicaron exclusivamente al mundo de la viticultura, bajo el lema "Ex Vite Vita" -la vida viene de la cepa-, un concepto que ha acompañado las sucesivas generaciones de la familia y ha creado un estrecho vínculo entre el hombre y la tierra. Las variedades que tienen plantadas son las blancas macabeo (15 hectáreas), xarel·lo (18 Ha.), parellada (12 Ha.) y chardonnay (7 Ha.), y las tintas merlot (4 Ha.), monastrell (2 Ha.), garnacha (2 Ha.), cabernet sauvignon (3 Ha.), tempranillo (4 Ha.) y pinot noir (2 Ha.). La infraestructura de la cava está distribuida por secciones: recepción de la vendimia, elaboración de vino, bodega de crianza y sección de embotellado. Disponen de 20 depósitos de acero inoxidable de 150 Hl. y 6 de 30 Hl., prensa neumática donde seleccionan los primeros mostos, depósitos refrigerados y barricas de roble francés (20) y americano (70). La producción anual de la cava es de 315.000 botellas y 20.000 de vinos, y en la cava tienen un stock de 1.100.000 de botellas. Los cavas de Llopart tienen como denominador común largas crianzas que le aportan finura de nariz y complejidad aromática.
