La tradición.
Hace más de tres generaciones, en Rovellats, elaboramos vinos y cavas a partir de la uva que vendimiamos en nuestras propias tierras. Resguardados en nuestra bodega, situada justo debajo de la Masía del siglo XV, se esperan pacientes hasta lograr su punto óptimo de maduración, momento en el que ven la luz para dar placer a los paladares más exigentes y sensibles. La Finca Rovellats representa desde el siglo XV la más pura tradición catalana. El pequeño pueblo de Sant Martí Sarroca, en el Alt Penedés, ha sido el enclave en el que este histórico caserío, formado por diversos edificios con vestigios medievales y rodeado de un jardín modernista, se ha rodeado progresivamente de viñedos. Son ya tres generaciones las dedicadas a la elaboración de vino y cava. A inicios del siglo XX, Josep Vallès Rovira, fundador de las cavas, inició la producción de espumosos. Después Rosa Vallès y Joan Cardona, segunda generación al frente de la cava, introdujeron importantes innovaciones tanto en bodega como en el viñedo. A día de hoy, son Mª Rosa y Josep Cardona, la tercera generación, los encargados de liderar las más de 210 hectáreas de la propiedad, manteniendo el compromiso con el medio ambiente que siempre ha caracterizado a la firma y la apuesta mayoritaria por las variedades autóctonas.
Uva propia.
En Rovellats se trabaja con uva propia que una vez convertida en vino descansa al cobijo de la masía del siglo XV. Sólo cuando la calidad alcanza su punto óptimo se lanzan al mercado unas botellas cargadas de historia y tradición familiar que denotan con claridad todo el saber acumulado tras largos años de aprendizaje y rigor. Los vinos y cavas de Rovellats son elegantes y exhiben un fuerte sentido de territorio, buscando perpetuar el estilo de la casa respetando al máximo el viñedo y los tiempos pasados, pero sin dar la espalda a la innovación propia de los nuevos tiempos. En sus instalaciones se pueden visitar la capilla de la Virgen de Montserrat, la colección de carteles modernistas y botellas antiguas y las cavas subterráneas a doce metros de profundidad, diseñadas bajo una concepción arquitectónica radial única.
