Champagne Gosset

La historia.
La historia de la región de Champagne no se entendería sin Gosset. Ambas, región y bodega, comienzan su andadura en 1580, dos siglos antes del descubrimiento de la efervescencia, con la elaboración de vinos tintos tranquilos de Pinot Noir y Chardonnay denominados "vins d'Aÿ". Eran los vinos más demandados en la corte francesa de Enrique III y Louis XIII, junto con los vinos de borgoña. Pierre Gosset inició esta actividad en la zona, por lo que son ya más de 400 años tratando la pinot noir y la Charonnay. La filosofía de la bodega hoy en día se centra en mantener la calidad por encima de todo (ventas, producción, etc..). Cuando la uva es excelente para elaborar un millón de botellas, se hace, pero si la calidad de la uva no es la apropiada, la bodega baja la producción de botellas a favor de la calidad. La uva que trabaja Gosset es un 95% Grand Cru, pocas bodegas ofrecen este dato y es la única forma de tener una calidad constante.
Generación tras generación.
Champagne Gosset se basa en una elaboración tradicional que se mantiene generación tras generación.
La vendimia se hace de forma manual en su totalidad, haciendo una primera selección en viña donde se escoge sólo la uva perfectamente sana, una vez prensada la uva, sólo se utiliza para la fermentación del vino base que luego irá a Gosset, el mosto de primera prensada o "mosto flor", algunos de los mostos son fermentados en tinos de roble francés que les confiere concentración de aromas y finura; además, ninguno de los vinos base hace la fermentación maloláctica inmediatamente después de la alcohólica, sino que realizan esta segunda fermentación en botella (rima), esto aporta un punto de frescura extra que sólo Gosset presume tener.
