Un sueño cumplido.
Nos remontamos al año 1989, año en el que Antonio Sanz cumplió su sueño de elaborar sus propios vinos en Navarra, tras toda su vida dedicada al mundo del vino. Para conseguirlo muy pronto se dió cuenta que ademas del trabajo en bodega, era fundamental el cuidar y mimar sus viñas. Hoy, sus hijos, vemos lo importante que fué su decisión para poder hacer algo especial en este apasionante mundo del vino. Esta es la filosofía que Antonio inculcó desde pequeños a sus hijos y con este concepto nace en el año 2007 el nuevo proyecto: Viña Zorzal. Aquí Antonio ya no está solo; sus hijos toman las riendas. Viña Zorzal Wines es una compañía de vinos en DO Navarra y DOC Rioja.
El rescate de variedades autóctonas.
Viña Zorzal elabora vinos en la DO Navarra y en la DOC Rioja, y rescata las variedades autóctonas que tan de lado se habían dejado, Graciano y Garnacha. Uno de sus viñedos situado en Fitero, justo en la separación geológica entre la Sierra de Cameros y la Cuenca del Ebro, es uno de los más antiguos que se conocen en Navarra. En concreto se trata de un viñedo de Garnacha de 115 años que ha sobrevivido a la filoxera. En Corella, localidad históricamente ligada al vino por las características de sus suelos, se encuentran los viñedos de Tempranillo, Graciano y Garnacha. También elaboran vinos bajo la DO Rioja, con viñedos controlados a 550 metros de altitud sobre el nivel del mar. Practican una viticultura ecológica y basada en la mínima intervención, llevando los todos los procesos de forma manual. En bodega continuan con esa filosofía, las fermentaciones son espontáneas, evitan trasiegos y los vinos no son filtrados ni clarificados.

Fitero.
En esta zona, la influencia mediterránea del Valle del Ebro desaparece dejando paso a un clima más continental, veranos muy calurosos, inviernos muy fríos y grandes diferencias de temperaturas diurnas y nocturnas. La temperatura media anual oscila entre los 13º y 14 °C, las precipitaciones anuales están entre los 400 y 500 mm, Los periodos vegetativos favorables para la viña son de los más largos de la D.O. Navarra: Unos 227 días aproximadamente.
Diferenciación del terreno.
Con estas condiciones áridas, el viñedo tiene que buscar agua, las arcillas al ser heterogéneas ayudan a las raíces a buscarla profundamente. Esta zona nos ofrece más factores de calidad, nos encontramos justo en la separación geológica entre la Sierra de Cameros y la Cuenca del Ebro. Los viñedos se encuentran en suelos rocosos y pedregosos suelos con arcillas abigarradas, heterogéneas, calizas, conglomerados. Estas arcillas al no ser homogéneas hacen que los suelos sean mucho más permeables y resistentes a la erosión que los suelos de la Cuenca del Ebro. Al ser los viñedos en vaso sobre suelos rocosos y pedregosos, la piedra retiene el calor durante el día y lo libera por la noche, lo que tiene el efecto de acelerar la maduración de las uvas. Las piedras sirven también como una capa protectora que ayuda a retener la humedad en el suelo durante los secos meses de verano.

Recuperando la flora.
La flora que encontramos alrededor del viñedo y que estamos recuperando de forma activa, es de gran curiosidad, desde especies endémicas como plantas labiadas que viven en terrenos yesosos, hasta euforbiáceas emparentadas con algunas especias norteafricanas. También se encuentra té de monte, soplaiplón y opiáceas salvajes, además de amapolas. También hay presencia de berros, brionias, datura stramonium, la equisetácea cola de caballo, una reliquia del Periodo Carbonífero. Puede que debido a estas características únicas de la zona, presumamos de tener uno de los viñedos más antiguos que se conocen en Navarra, viñedo de Garnacha de 115 años que ha sobrevivido a la filoxera, justo ahora nos encontramos investigando las particularidades únicas de este viñedo.
Vinos de pueblo, Corella.
En esta zona, a una altitud de 371 metros, la influencia mediterránea del Valle del Ebro es algo mayor que en Fitero, aun así, los veranos también son muy calurosos e inviernos muy fríos y las diferencias de temperaturas diurnas y nocturnas son también grandes. La temperatura media anual es de 13,3º , las precipitaciones anuales son de unos 500mm. La orografía es plana y los viñedos de tempranillo, graciano y garnacha, en espaldera. Corella, históricamente está ligada al vino también por las características de sus suelos, la tierra, arcilla calcárea es perfecta para estas variedades locales.

La Rioja Alavesa.
El clima, mediterráneo, con una altitud de 555 metros sobre el nivel del mar, recibe una clara influencia del Cantábrico atemperado por las montañas que la cierran al Norte.La temperatura media anual oscila entre los 12,6º y los 13,2º con una pluviosidad media de unos 650 mm. El clima es mediterráneo, de tipo seco sub-humedo. Los viñedos que controlamos se sitúan a unos 550 metros de altitud. El suelo es uno de los factores de calidad más diferenciadores de esta zona, se trata de “Tierra Parda Caliza”, es un suelo pardo-amarillento, pobre, muy calizo, profundo, más o menos cascajoso, de consistencia medio o ligera, se trata de un suelo pobre, las raíces de la vid se hunden en el suelo profundamente, explorando amplios volúmenes para asegurarse los nutrientes necesarios. Mayoritariamente trabajamos con la variedad Tempranillo y en menor proporción con Garnacha.
Prácticas realizadas.
Practicamos una viticultura de poca intervención y ecológica, no labramos los viñedos, todos los procesos son llevados a cabo manualmente, usamos cubiertas vegetales de plantas autóctonas que antes hemos estudiado, abonamos con compost que mejoran la resistencia de la vid a enfermedades. En bodega continuamos con mínima intervención, las fermentaciones son espontáneas, evitamos trasiegos, no filtramos ni clarificamos, no utilizamos aditivos y solo añadimos sulfuroso en dosis muy moderadas.
