La bodega y entorno.

La bodega se ubica en un cerro en la parte alta de la Villa, un auténtico balcón con vistas al Valle del Ebro y la Sierra de Cantabria, a la Sierra de La demanda y a Ollauri y sus viñedos. Su estructura se integra perfectamente en el paisaje según la construcción tradicional del barrio de las bodegas que preside la parte alta de Ollauri, un montículo en el que tradicionalmente se han aprovechado las laderas para excavar sus característicos calados. La arquitectura ha sido concebida para una bodega que cuenta con el sistema de elaboración más vanguardista de La Rioja y uno de los más avanzados del mundo. Así, el 80% de su superficie está enterrada en el cerro para aprovechar al máximo la gravedad en la recepción y transporte de la uva. Su conjunto urbano es uno de los más bellos de la región y en sus calles destacan los palacios en piedra de sillería con dos plantas. En sus fachadas lucen los balcones con huecos de gran tamaño y los escudos nobiliarios decoran estos edificios. La iglesia parroquial se construyó en la segunda mitad del XVI, su torre un siglo más tarde. Sobre el pueblo, y aprovechando el desnivel de la ladera, surgen las tuferas o chimeneas de ventilación de las bodegas que se encuentran en el subsuelo. Algunas de estas construcciones se remontan a la Edad Media. Otras tienen un pasado centenario y mantienen la calidad de los caldos gracias a su temperatura constante y su permanente nivel de humedad.

Nuestro viñedo.

Amparar la tradición desde la modernidad, dirigirnos al futuro manteniendo los valores de una historia centenaria y descubrir nuevas formas de reflejar nuestra esencia son las mejores herramientas para expresar que nuestro sueño se mantiene vivo. Ofrecer un trato exquisito a la materia prima. Ésa es la filosofía de trabajo de Marqués de Terán. Durante todo el año, los viñedos son tratados con sumo cuidado y siempre bajo la supervisión del Departamento Técnico de la Bodega. Marqués de Terán controla 80 hectáreas de viñedo repartidas entre diferentes parcelas cercanas al municipio de Ollauri. Esta zona de Rioja se caracteriza por la excepcional calidad de su suelo y el bajo rendimiento de sus viñedos, lo que favorece la calidad de la uva. La diferenciación también está presente en la forma de trabajar el viñedo. Así, meses antes de la vendimia, se procede a aligerar la carga de las cepas, tirando la cantidad de uva necesaria para incrementar el vigor de la vid y mejorar la producción y calidad de las cosechas. Llegado el momento de la vendimia, toda la cosecha se recoge de forma manual y las uvas se depositan en cajas de 17 kilogramos de capacidad para evitar su aplastamiento. La uva recogida en cada jornada llega a la Bodega en menos de 3 horas. De esta manera, el fruto, recién recogido de la cepa, entra a Marqués de Terán en las mejores condiciones posibles, sin sufrir aplastamientos ni experimentar inicio alguno de fermentación.

I+D+I.

Desde su puesta en marcha, Bodegas Marqués de Terán de Ollauri siempre ha apostado por la Investigación, el Desarrollo y la Innovación, I+D+i, como punto de apoyo fundamental para incrementar la calidad de sus elaboraciones. Esta constante apuesta por la I+D+i es una de sus señas de identidad y está presente en todo el proceso de vinificación. Para favorecer el desarrollo de proyectos de investigación, la Bodega dispone de un departamento propio que trabaja en colaboración con organismos oficiales como el Gobierno de La Rioja o el Centro para el Desarrollo Tecnológico Industrial (CDTI). Como recompensa a este esfuerzo investigador, Bodegas Marqués de Terán de Ollauri ha merecido el Premio a la Innovación del Gobierno de La Rioja 2007 por “integrar con éxito tradición, innovación y desarrollo sostenible”. La Bodega está certificada según la Norma ISO 22000 de Gestión de Seguridad Alimentaria e ISO 9001 de Gestión de la Calidad. Además, posee las certificaciones en las Normas Técnicas BRC, British Retail Consortium, e IFS, International Food Standard, que garantizan la seguridad del producto en las exportaciones y la eficiencia en todas las fases de la cadena de suministro. Además de obtener las cuatro certificaciones simultáneamente, éstas se consiguieron en menos de un año. Un tiempo récord que demuestra su capacidad por adaptarse e, incluso, superar las exigencias del mercado.
