Olivier Rivière es un enólogo inquieto y muy admirado por su gran capacidad técnica, tanto en el campo como en la bodega, un hombre que escucha el terreno, la viña, y sabe interpretarla. Sus vinos son honestos, fieles reflejos del terruño y de las uvas, que cultiva tanto en la Rioja Alavesa, como en Arlanza y Navarra. Por el momento. Olivier Rivière ha trabajado en diferentes bodegas de renombre, y codo a codo con personalidades importantes del mundo del vino (Elian da Ros, Fréderic Cossard, Domaine Leroy, Telmo Rodríguez...). Su proyecto Olivier Rivière Vinos comienza en Rioja en el año 2006 y a él se une Antoine Habera en el año 2012. Los viñedos se cultivan sin utilizar ningún tipo de herbicidas ni abonos químicos, y los tratamientos se realizan exclusivamente a base de productos biológicos, aplicados sólo cuando son estrictamente necesarios. La vendimia es manual y la vinificación se lleva a cabo sin añadir levaduras. Con pequeños proyectos en Rioja, Arlanza y Navarra, el francés Olivier Rivière es uno de los más claros representantes de la nueva hornada de pequeños productores que han surgido en España en la última década. Llegó a nuestro país en 2004 para trabajar con Telmo Rodríguez, pero muy pronto empezó a comprar uva y elaborar por su cuenta. En los últimos años además se ha hecho con viñedos propios en distintas zonas que, fiel a su filosofía borgoñona, elabora por separado. El primero fue en el paraje El Quemado, en Covarrubias, un valle olvidado de la Ribera del Arlanza (Burgos); luego llegaron Alto Redondo en Dicastillo (Navarra) y más recientemente varias viñas en el entorno de Laguardia (Rioja). Asesora enológicamente a Bodegas Lacus en Rioja, en cuyas instalaciones de Aldeanueva de Ebro elabora también sus riojas.

Su filosofía y sus vinos.

Para Rivière el foco de atención está en el viñedo y en la obtención de uvas de alta calidad. Elabora normalmente por municipios o viñedos y apuesta por depósitos de vinificación pequeños: tanques de cemento o tinas de roble de 2.000 a 5.000 litros. A menudo emplea raspón en fermentación y definitivamente apuesta por volúmenes grandes para la crianza: barricas de 300 y 500 litros.
En Rioja trabaja con uvas de distintos puntos de la denominación. Elabora dos blancos que buscan complejidad y desarrollo en botella, ambos trabajados en barrica y con uvas de Labastida: El Bastid, antes llamado Jequitibá, y el más reciente, original, complejo y muy sorprendente Mirando al Sur, que se cría en botas de Jerez. En tintos, Rayos Uva, es un coupage de uvas de Rioja Baja (tempranillo, garnacha y graciano). Ganko es un original coupage de garnacha y mazuelo a partes iguales que se elabora con uvas de Cárdenas (valle del Najerilla) y vinifica habitualmente con raspón, lo que imprime frescura y carácter balsámico. Desde la cosecha 2013 elabora Las Viñas de Eusebio, con uvas propias y alquiladas en el entorno de Laguardia y Losares, a partir de una viña vieja de 1930 en propiedad en Navaridas que da notable profundidad y más concentración al vino. El grupo de vinos de parcela se cierra con Pozo Alto, que se elaboró por primera vez en 2015 y es una original y vibrante combinación de graciano con un 20% de tempranillo y garnacha, una selección muy específica dentro de un viñedo más amplio ubicado en Leza. El proyecto de Ribera del Arlanza está centrado en los tempranillos cultivados en el paraje específico de Covarrubias, caracterizados por su altitud y microclima diferenciado. Originariamente incluía dos tintos: uno de municipio, El Cadastro, elaborado con uvas de tres parajes diferentes; y la etiqueta de pago El Quemado, junto con el muy escaso blanco Basquevanas, que se elabora recopilando las uvas blancas, mayoritariamente de albillo real, que se encuentran repartidas en los distintos viñedos y que no se elabora en todas las añadas. Posteriormente se ha lanzado La Vallada, que se elabora con uvas de un viticultor local. Respecto a Alto Redondo, su garnacha navarra, está centrada en la recuperación de un pequeño y viejo viñedo cuyos escasos rendimientos no le permiten elabora el vino todos los años.
