Español [ ES ]U Mes U Fan Tres, 1+1=3, es una bodega innovadora del Alt Penedès fundada en Font-rubí en el año 2000, aunque sus fundadores, Josep Antoni Bonell y Josep Piñol habían estado vinculados al sector desde mucho tiempo atrás. Plenamente comprometidos en la conservación del medio ambiente, decidieron volver a los orígenes, a la interpretación de la agricultura de sus antepasados. Aplicando el cultivo ecológico en todos sus viñedos elaboran actualmente sus cavas y vinos bajo las Denominaciones de Origen Protegidas Penedès y Cava. Todos ellos están certificados por el CCPAE (Consejo Catalán de la Producción Agraria Ecológica). Sumamos visiones y esfuerzos. Sumamos pasiones e instintos. Sumamos también alegrías,triunfos y celebraciones. No es una suma, son muchas: La arcilla y la piedra alcárea; la cepa y la abeja, el viñedo y la bodega; el viticultor y el elaborador; el medioambiente y tú. Juntos, sumamos.
Somos aquello que nos importa.
- Las personas. Suman todas y cada una de las personas entregadas a U MES U. El cuidado del viñedo, la vinificación, la crianza… Cada uno de nosotros aporta su conocimiento y experiencia, cruciales para este proyecto.
- Búsqueda constante. La investigación, prueba y error, el aprendizaje y la ambición insaciable por mejorar, es lo que nos permite aumentar la calidad de nuestros vinos año tras año.
-EL medioambiente. Implementar una agricultura sostenible es nuestra responsabilidad. Para ello es imprescindible el cultivo ecológico y la observación continua del viñedo. Todos nuestros cavas y vinos cuentan con la certificación ecológica del CCPAE.
Su filosofía se sustenta en el principio irrenunciable de que solo las uvas orgánicas, sanas, maduras y cultivadas en armonía con su ecosistema, pueden ser la base para elaborar vinos genuinos, expresivos y que reflejen las características del terruño. A partir de la premisa de que el vino de calidad se hace en el viñedo, se imponen la misión de respetar lo que la madre naturaleza pone en sus manos. El factor decisivo en su vinificación es el esfuerzo continuado que se lleva a cabo durante todo el año en las viñas. Elaborar un vino armónico, a partir de cepas bien equilibradas, con el ratio óptimo de hojas y racimos y una adecuada exposición al sol para asegurar al mismo tiempo la frescura y la plena maduración de la uva, exige el cuidado de cada parcela por separado. En consecuencia, las uvas de cada parcela también se vinifican separadamente empleando la más avanzada tecnología, gases inertes para prevenir oxidaciones y bajos niveles de sulfuroso. El objetivo final es preservar la más pura expresión de cada variedad y parcela.
