Bollinger nació de la asociación entre un terrateniente francés y un comerciante alemán. Tras más de 150 años de fructífera asociación, el espíritu de confianza e implicación mutuas sigue vivo en todas las acciones que emprende esta prestigiosa casa francesa, siendo un símbolo vivo de los valores y el orgullo que comparten los hombres y mujeres que trabajan con Bollinger. En Bollinger, el tiempo es la materia prima más preciosa que tienen. Durante el largo envejecimiento en las cavas subterráneas, superior al que establece la normativa de la denominación, los aromas eclosionan y se armonizan, expresando toda su personalidad. Como símbolo de una concepción purista del champagne, Bollinger sólo produce dos familias de assemblages procedentes exclusivamente de la cuvée, el mejor mosto procedente del prensado.
Bollinger es un gran vino, mucho más que un gran champagne. Por eso aquí todo comienza por las viñas y la exigencia de lo mejor con respecto a la selección de los cru, pagos. Con 163 hectáreas, Bollinger explota más del 60% del viñedo que necesita, una situación absolutamente excepcional en champaña, lo que garantiza la perpetuidad cualitativa del estilo. La misma exigencia preside la elección de los crus. Bollinger se abastece en más de un 80% en grands y premiers crus que representan tan sólo el 20% de crus de la denominación. La calidad de las uvas seleccionadas justifica que Bollinger solo utilice la Cuvée, es decir el mosto del primer prensado en el momento de la vendimia. Otra excepción en Champaña. Bollinger es una de las principales bodegas de la Champaña, una Maison distinguida por su fidelidad a la tradición y reconocida por un estilo que debe, principalmente, a quien la dirigió magistralmente durante treinta años: Madame Jacques Bollinger. Desde el año 2008 y por primera vez en su historia, es una persona externa a la familia, Jérôme Philipon, quien asegura la continuidad de los principios y los valores de esta célebre bodega aristocrática. Bollinger se autodefine, en primer lugar, por elaborar un gran vino, un vino cuya altísima calidad debe a unos viñedos propios situados en Grands Crus y Premiers Crus en un 83% y que le permiten cubrir el 60% de su producción, cuando la media se sitúa en el 11%. Además se caracteriza por priorizar la uva pinot noir, base de sus assemblages, por ser una uva que aporta una especial vinosidad, complejidad y potencial, por realizar las primeras fermentaciones en barricas y envejecer sus vinos de reserva en botellas mágnum con tapón de corcho, así como por presentar sus productos finales casi sin azúcar añadido.
