Su enfoque actual está dedicado a sus vinos blancos precisos y elegantes. Después de ascender por los escalones hasta convertirse en jefe de viticultura, Guillaume ahora está a cargo de los vinos tintos en el dominio. Él ha forjado sutilmente su propio estilo en el proceso de vinificación, revelando lo mejor de los terruños, especialmente en Volnay.
