Una nueva generación de Viticultores.

Bordelés de origen, berciano de corazón: Gregory Pérez es diplomado por la Escuela de Enología y Viticultura de Burdeos de Blanquefort en 1998; pertenece a nueva generación de elaboradores que priman el terruño por encima de todo. Ha desarrollado su trabajo en Château Grand-Puy-Lacoste y especialmente en Château Cos dEstournel entre 1997 y 2000. Tras sus primeros pasos en Francia, sus raíces familiares -y el empujón de algún amigo- lo trajeron a España y en concreto al Bierzo. Después de trabajar en Luna Beberide y posteriormente en Paixar junto a Eduardo García, Gregory emprende su camino en solitario con Mengoba. Grégory Pérez es uno de los componentes de la nueva generación llamada a tomar el relevo en la elaboración de los grandes vinos de España desde su bodega Mengoba. Un proyecto en el que dedica toda su energía y que comparte con sus compañeros de generación una filosofía que busca el respeto y la sostenibilidad de la viña. Unos principios que están logrando sacar a la luz vinos naturales y con la personalidad de cada “terroir”.LAS VIÑAS DE ESPANILLO.

Las viñas y la bodega.

Las viñas se encuentran en la localidad de Espanillo, en la comarca del Bierzo, en la cabecera del río Cúa. Están situadas en laderas de pronunciadas pendientes a más de 600 m de altitud, orientadas al mediodía y ventiladas por constantes corrientes de aire. El suelo está compuesto de una mezcla de arcillas y pizarra descompuesta, dentro de un entorno boscoso y de gran diversidad natural. La bodega se encuentra ubicada en San Juan de Carracedo, a una escasa distancia del bello e histórico Monasterio de Carracedo,uno de los más importantes del Bierzo y del Camino de Santiago. Cuenta con varios depósitos de diversas capacidades de acero inoxidable, además de fudres y barricas de roble francés para la fermentación y maduración de nuestros vinos blancos y tintos. Queda totalmente descartados. Las viñas se labran con el arado y sus alrededores se desbrozan con moderación. Conservar un ecosistema rico y diverso. A través del cuidado de la flora con sembrados , barbechos de flores, setos naturales o mantenimiento de las zonas arboladas. Respeto a la fauna aplicando remedios naturales para repeler insectos o apoyando la presencia de abejas con la implantación de colmenas a los alrededores de las viñas.

Vinificación.

Son esenciales para la calidad de un vino. Las bajas producciones por cepa aseguran una óptima maduración y concentración. Sólo se realizarán aclareos de racimos si es estrictamente necesario, al igual que el aporte de abonos orgánicos. Las podas deben ser adaptadas tanto en invierno como en verde. Sólo los métodos tradicionales expresan al máximo el terroir. El uso de levaduras autóctonas de cada viñedo favorece la diversidad de aromas y la personalidad de los vinos. Si se respeta el origen de la uva se logran vinos auténticos. También limitando las dosis de sulfuroso y no usando “chips” ni productos que puedan alterar los rasgos aromáticos.
